Preheat the oven to 400 F (200 C).
Mix the egg, buttermilk, and apple juice. Set aside.
In the bowl of the mixer with the pastry blender, mix the flours, sugar, baking powder, sodium bicarbonate, and salt.
Incorporate the butter until the texture resembles large peas.
Add the apple and cranberries and mix a little.
Incorporate the liquid mixture and mix just enough.
Pour the dough into the silicone mold and press into the corners with a spoon.
Bake for 20 to 22 minutes.
Serve with butter or good jam.
