1. Preheat the oven to 300F.
2. Peel the apples, cut into quarters and remove the cores. Slice the quarters.
3. In a saucepan, heat the butter and 70 g of sugar. Add the apple slices and cook over low heat for 5 minutes.
4. Butter 6 individual molds and place the apple slices in them.
5. In a bowl, beat the eggs and 80 g of icing sugar. Add the cream, almond powder, rum, and orange zest. Mix well.
6. Pour the mixture over the apples. Place the molds in a deep oven dish. Pour in water up to half the height of the molds.
7. Bake for 35 minutes.
8. Remove from the oven. Let cool for 10 minutes before unmolding. Serve warm.
