Preparation
Put the apricots and lime juice in a large bowl.
In another bowl, mix the honey, almond extract, lime zest, and peach nectar.
Pour the sauce over the apricots and mix.
Serve the tartare in small bowls and garnish with melissa (and chocolate shavings, if desired).
