Preparation
1. Cut the top part of the artichokes. Cut the tip of the leaves to remove the thorns.
2. In a pot of boiling water, add the lemon juice. Submerge the artichokes for 20 minutes.
3. Drain and let cool.
4. Hollow out the artichokes by removing the small leaves from the center and the hay attached to the heart.
5. Cut all the remaining fruits and vegetables into small dice and transfer to a bowl.
6. In another bowl, pour the oil and vinegar. Add the chopped basil and mix. Add the fruits and vegetables. Season with salt and pepper.
7. Fill the artichokes with the mixture. Refrigerate and serve fresh.
