1. Preheat the oven to 180°C/350°F.

2. Clean the artichokes. Sprinkle with lemon juice.

3. In a pot of boiling water, blanch the artichokes for 15 minutes. Drain. Let cool.

4. In a bowl, mix the feta, chives, diced bell pepper, and olives. Season generously and add thyme, oregano, vinegar, and oil. Set aside.

5. Hollow out the artichokes by removing the small leaves from the center and, with a small spoon, the choke attached to the heart.

6. Fill the artichoke with this mixture. Refrigerate for a few hours before serving.
