1- Cut the tip of the artichokes. Using scissors, cut off all the tips of the leaves to remove the thorns. Break the stem of the artichokes.
2- Place the artichokes in water with the juice of a lemon. Place on the fire and bring to a boil. Reduce the heat and let simmer for about 15 minutes or until the artichokes are tender under the tip of a knife.
3- Drain the artichokes and let them cool before handling them. Gently open the center of the artichokes and remove the central leaves and the beards. Using a spoon, remove the beards until you reach the heart.
4- In a bowl, mix the mayonnaise, the juice of two lemons, the pepper puree, and the shrimp.
5- Fill the center of the artichokes with shrimp in mayonnaise. Serve immediately.
