1. Grate 1 tablespoon of ginger.
2. Chop the cashews.
3. Peel the garlic and press it.
4. Remove seeds from peppers; slice the peppers.
5. Rinse the soy sprouts and drain; put in a bowl.
6. Slice the celery into rounds.
7. In a large bowl, slice the Chinese cabbage. Add soy sprouts, celery, the unpeeled apple sliced into thin quarters, pepper, and cashews.
8. Prepare a vinaigrette with soy sauce, 2 pinches of salt, apple cider vinegar, and 3 tablespoons of oil. Add garlic and ginger. Mix with the salad and serve immediately.
