1. Peel the apples. Cut them into 4. Remove the core and pips.
2. In a pan, heat half of the butter. Add the apple quarters. Sprinkle with vanilla sugar. Caramelize for about 20 minutes, adding the rest of the butter a little at a time, and turning the apples 2 times in their caramel.
3. Coarsely chop the hazelnuts.
4. In a bowl, mix the mascarpone and powdered sugar.
5. Divide the mascarpone into dessert cups. Arrange the caramelized apple quarters and sprinkle with chopped hazelnuts. Serve immediately.
