1. Cut the apples into 1/2-inch thick slices.

2. Melt the butter in a thick pan and lightly brown the bacon. Remove and drain on paper towels. Keep warm.

3. Fry the onion slices in the remaining fat until tender. Add the apples. Cover and simmer for 5 to 10 minutes, shaking the pan occasionally to prevent sticking.

4. Return the bacon to the pan and heat. Season with pepper, sprinkle with parsley, and serve.
