Preparation

1. Preheat the oven to 200°C.

2. Peel the apples, core and cut into thick slices.

3. In a non-stick pan, lightly brown and caramelize the apples with the chopped shallots, butter, and sugar. Season with salt and pepper.

4. Butter a tart dish. Line the bottom with bacon slices, arranging them in a star pattern. Arrange the apples on top in a regular layer, making sure not to leave any space. Sprinkle with chopped thyme.

5. Roll out the puff pastry over the apples and tuck the edge inside the mold.

6. Bake for about 25 minutes.

7. Remove from the oven. Unmold the tart onto a rack and serve immediately.
