Preheat the oven to 350 F (180 C).
Lightly grease two 4 x 8 inch (10 cm x 20 cm) bread molds, about 2 and 1/2 inches (6 cm) high, and line with parchment paper, making sure it overhangs on each side.

Sift the flour, baking powder, and baking soda into a bowl.
Add the sugar and coconut, and stir to mix well.

Whisk together the coconut milk, milk, eggs, banana puree, and vanilla extract in another bowl. Combine with the dry ingredients mixture and stir to combine.
Pour the mixture into the prepared molds and bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the molds for 10 minutes before unmolding onto a wire rack to cool completely.
Serve with jam if desired.
