Cut the filets into 12 fairly thick medallions.
Roll them in the herbes de Provence.
Wrap a slice of smoked bacon around each medallion and hold it in place with a wooden skewer inserted into the thickness of the meat, from side to side.
Cook the medallions, thus prepared, on the plancha for 5 minutes on each side, turning them often.
Season with salt and serve well cooked.
