1. In a pot of water, immerse the beets with the skin. Bring to a boil, cover and cook over medium heat for 30 minutes. Check the cooking until the heart with the tip of the knife.
2. Plunge the beets into ice water to cool them down. Peel the beets.
3. In a blender, puree the beets. Add the vinegar and fresh herbs. Season with salt and pepper. Mix well.
4. Serve with a little cottage cheese or sour cream, on slices of whole grain bread for a snack.
