1. Trim the celery and cut into slices. Peel the peppers, remove the membranes and seeds and finely chop. Chop the washed and drained coriander.
2. In a bowl, mix the sour cream, mayonnaise, lemon juice, paprika, coriander and vegetable slices. Taste; season with salt and pepper.
3. Reserve in the refrigerator and serve with the maize chips.
