1. Finely chop the onions and bell peppers.
2. In a large pot, heat the olive oil. Add the onions. Sauté for a few minutes. Add the bell peppers and cook for 2 minutes. Reduce the heat and cover. Cook for 7 to 8 minutes. Add the lemon juice.
3. Add the mustard and Espelette pepper (and a few tablespoons of water if necessary). Mix well. Add the flaky sea salt. Heat for 3 minutes.
4. Serve with grilled poultry.
Note: Can also be served as a starter for a light vegetarian meal.
