Preheat the oven to 180°F.

1. Pour the egg whites and sugar into a mixing bowl. Mix well to incorporate.

2. In a double boiler, heat the mixture, stirring constantly, until the sugar has dissolved, but be careful not to cook the egg whites!

3. As soon as the sugar has dissolved, pour the mixture into the mixer bowl.

5. Beat the meringue with the whisk at maximum speed until stiff peaks form.

6. Fill a piping bag with a round tip and shape the meringue circles on a parchment-lined baking sheet. Leave them spaced out.

7. Bake until hardened, 3 to 4 hours.

8. Let cool completely before dipping in melted chocolate.

9. Decorate with whipped cream and grated chocolate. Finish with the poached pear.
