Brown the two meats in a casserole with a little oil until almost cooked. Remove the meat and set aside.
Pour the rest of the oil into the same casserole and brown the onions and garlic. Tie the herb branches together and set aside.
Place the meat on top of the onions and mix. Pour in the red wine and reduce the heat to medium for 2 minutes.
Add the herbs, peeled tomatoes, and season generously.
Cover and simmer for 1 hour 15 minutes over very low heat.
