1. Chop the cabbage, potatoes, beets, carrot, and tomato into small pieces.
2. In a pot, heat the butter and oil. Sear the onion for 2 minutes. Add the carrots and beets.
3. Add the tomato. Add the cabbage and potatoes.
4. Add the broth and beer; season with salt and pepper. Cover and cook for 30 minutes.
5. Blend and serve.
