1. In a large pot, place the ham.
2. Cover with cold water and bring to a boil, then let boil for 10 minutes.
3. Add the vegetables and bay leaves and bring to a boil again. Reduce to medium heat and simmer for 1 hour. 20 minutes before the end of cooking, preheat the oven to 375°F.
4. Bake for 2 hours more.
5. Let cool to room temperature, then clean by detaching the meat by hand and removing the fat.
6. In a food processor, place the shredded ham, mayonnaise, and parsley. Mix and season.
Keeps for a week in the refrigerator.
