Preparation

Place the grill in the center of the oven and preheat to 325 F (160 C).

Braised Pork
Remove the twine and trim the fat from the roast. Cut into 4-5 pieces.
In an oven-safe pot, combine all the ingredients and bring to a boil.
Cover and cook in the oven for about 4 hours, or until the meat is very tender and shreds easily with a fork. Season with salt and pepper.

Using a fork or your hands, shred the meat. Adjust the seasoning and keep warm.

Pico de Gallo
In a bowl, combine all the ingredients.
Season with salt and pepper and let sit for about 10 minutes. Drain excess liquid.

Sandwiches
Split the bread rolls in half and toast, if desired. Fill with the pork mixture, lettuce, pico de gallo, sour cream, and cheese.
