Preheat the oven to 200 F (95 C). This is to keep the already made ebelskivers warm while you cook the others.
Combine flour, sugar, baking powder, grated nutmeg, and salt in a large bowl.
In a small bowl, lightly beat the egg yolks then incorporate the buttermilk and melted butter.
Mix the wet ingredients with the dry ingredients with a wooden spoon, until the preparation is homogeneous.
Beat the egg whites until stiff peaks form.
Gently fold the egg whites into the dough using a spatula.
The dough is ready to be used.
Heat the pan and grease the cavities with a brush.
Add 1 teaspoon (5 ml) of honey to each cavity.
When the honey starts to bubble, add two tablespoons (30 ml) of buttermilk dough and cook for 3 to 5 minutes.
Using wooden sticks, turn the ebelskivers over and continue cooking for 3 minutes.
Transfer to a plate and continue cooking the rest of the dough.
