Put the fresh goat cheese in the freezer for 20 minutes.

Preheat the oven to 350 F (180 C).
Prepare a muffin tin with 8 cups and set aside.

Combine the flour and baking powder.
Add the eggs and mix with a whisk.
Dilute the mixture with lukewarm milk and oil.
Add the grated mozzarella, diced prosciutto, and 1/3 of the crumbled goat cheese, then mix well.
Divide the mixture among the cups.
Top the cakes with the remaining crumbled goat cheese.

Bake for 30 minutes or until the cakes are lightly golden brown.
Serve warm or cold, accompanied by a salad.
