1. Open the apricots in half and pit them.
2. In a bowl, mix the water and lemon juice. Soak the fruits.
3. Transfer the fruits to a saucepan. Cover with cold water and heat. When the fruits come to the surface, just before boiling, remove from heat and rinse under cold water. They will be well firmed up.
4. Prepare a syrup: In a saucepan, mix the sugar and water. Just at the moment of boiling, remove the saucepan, plunge the fruits into the syrup and let rest for 24 hours.
5. The next day, remove the fruits with a skimmer. Heat the syrup and plunge the apricots into it again until the next day.
6. Serve as a dessert, in cakes or with yogurt
