Preparation
In a saucepan, boil the milk, half of the sugar, the zests of orange and lemon, cinnamon and star anise.
Let cook over low heat until boiling.
In a bowl, pour the remaining sugar and 3 egg yolks.
Using a whisk, mix energetically.
Add the flour and stir to obtain a homogeneous texture.
Using a small strainer, slowly pour the milk and spice infusion into the bowl of white sugar and stir gently.
Put the entire preparation back into a saucepan. Cook over low heat, stirring constantly with a wooden spatula until the preparation thickens.
Finishing
As soon as the cream thickens, pour it into burned cream ramekins and let cool.
Sprinkle the ramekins with brown sugar and caramelize with a grill or kitchen torch.
