1. Mix together in a bowl the orange juice, lemon juice, cinnamon, nutmeg, vanilla and 2 tbsp of sugar.
2. Melt the butter in a pan and brown the pineapple for 3 to 4 minutes.
3. Pour in the fruit juice and stir the fruit to release the caramelized cooking juices.
4. Reduce by half, then pour in the rum and flambé everything.
