Preparation
1. Bring a liter of salted water to a boil. Add the peeled and diced carrots and potatoes, 4 shallots cut into pieces, the bunch of fresh herbs, and the four-spices.
2. Cook for 25 minutes.
3. Discard the bunch of fresh herbs and mix finely. Adjust the seasoning.
4. Peel and slice 2 shallots. Brown them in 20 g of butter. Sprinkle with sugar and let caramelize lightly.
5. Reheat the soup and add the remaining butter. Top with the shallots and chives. Decorate with some grated carrots. Serve.
