1. Peel the onion, carrots, and potatoes. Finely chop the carrots, cut the potatoes into small cubes, and chop the onion. Chop the herbs together and set aside.
2. In a saucepan, heat the oil. Add the onion and cook for 2 minutes over medium heat. Add the carrots and stir for 2 minutes. Pour in 1 L (35 fl oz) of water. Bring to a boil, add the chicken bouillon cubes and potatoes. Cover and cook for 30 minutes over low heat.
3. Blend the soup in a blender. Add the cream and chopped herbs and mix in short bursts. Season with salt and pepper. Serve with a fresh baguette.
