Preparation

Prepare the garlic butter:
Mix all the ingredients in a bowl and mash well with a fork.
Let it sit at room temperature.

Bread:
In the stand mixer bowl, combine the water, honey, and yeast together.
Let it rest for 5 minutes..
Add the flour and then the salt, and start kneading at medium speed.
Knead for 8 to 10 minutes until the dough is smooth and elastic.

Grease a bowl, then put the dough in it and cover it with plastic wrap, and let it rise for 1 hour or until the dough has doubled in volume.

Deflate the dough and cut it into two equal portions.
Shape two baguettes, then twist them onto themselves to maintain their length and prevent them from shrinking.
Place the baguettes on baking sheets lined with parchment paper.
Cover with plastic wrap and let rise for 30 minutes.

Preheat the oven to 400 F (200 C).
Place the baguettes in the oven and bake for 20 minutes.

Meanwhile, cut the cheese into slices and melt the garlic butter in the microwave.

Remove the bread from the oven and brush it with garlic butter.
Return the baguettes to the oven and continue baking for 5 to 7 minutes.

Remove the baguettes again and with a bread knife, cut slices 3/4 of the way through the thickness, 1 inch (2.5 cm) apart.
Brush with garlic butter in each slit, then fill with cheese.
Return the baguettes to the oven for 3 to 5 minutes or until the cheese is melted.
Remove from the oven and serve immediately.
