In a small pan, sauté the chopped onion and garlic in a small amount of olive oil until tender and set aside.
In a large bowl, combine the chicken, breadcrumbs, cheese, and three eggs. Mix well.
Test the mixture to see if it can be molded into croquettes. If it seems dry, add another egg or a little chicken broth.
Add the parsley, onions, garlic, lemon zest, and pepper to the bowl and mix well.
Heat 2 tablespoons of olive oil in a large pan over medium heat.
Mold the mixture into croquettes or balls and fry until golden brown.
Remove from heat and place on a paper towel to drain excess oil.
Tip: You can also bake the croquettes in the oven instead of frying them.
Simply place them on a baking sheet and bake at 350 F (180 C) for 30 minutes.
