In a wok or large skillet over high heat, heat 15 ml (1 tablespoon) of canola oil and stir-fry the bell peppers and snow peas for 3 to 4 minutes. Set aside.
Still in the wok or large skillet, add the remaining canola oil and stir-fry the chicken strips for about 5 minutes, or until they are nicely browned.
Then add the garlic and ginger and cook for about 1 minute, without browning the garlic or ginger.
Add the hoisin sauce, soy sauce, maple syrup, and chicken broth to the chicken and stir well for 5 minutes, so that all the flavors are combined.
When the chicken is cooked, add the bell peppers, snow peas, and green onions and continue cooking for 2 minutes, or until everything is hot. Season to taste.
At serving time, garnish the plates with sesame seeds.
Serve with fragrant jasmine rice.
