Blanch the edamame in boiling salted water for 3 minutes.
Chop the onions in a food processor.
Add the edamame and fish sauce. Season with salt and pepper.
Space out the wonton wrappers on the work surface.
Place a spoonful of filling in the center of each wrapper.
Moisten the edges of the wrappers with a little water and fold the wrappers over, sticking them together.
Pour the chicken broth and sesame oil into a slow cooker on low.
Cook for 2 hours.
Before serving, sprinkle with toasted sesame seeds and serve with pickled ginger.
