Preheat oven to 180 °C (350 °F).
Mix chicken, onion, tomatoes, and herbs. Season with salt and pepper.
Cut cheese into 4 equal slices. Shape 4 patties with the chicken mixture, placing a cheese slice in the center of each. Coat with cornmeal and set aside.
Heat oil in a pan and brown patties over high heat for about 3 minutes. Continue cooking in the oven on a baking sheet for 10 minutes or until a meat thermometer indicates an internal temperature of 80 °C (175 °F). Serve on a bed of lettuce, as a sandwich, or in a mini version as an appetizer!
