In a large, heavy pot, brown the chicken pieces in oil over high heat for a few minutes. Set aside and keep warm.
Add the chorizo slices, onion, bell pepper, thyme sprigs, and garlic cloves to the pot and cook for 2 to 3 minutes.
Return the browned chicken to the pot with the remaining ingredients (shrimp, tomatoes, broth, rice, and seasonings), except for the cilantro, and bring to a boil.
Cover and cook over very low heat for about 30 minutes or until the rice and chicken are cooked (internal temperature of the chicken at 77°C (170°F)).
Place the pot on a trivet in the center of the table and garnish with fresh cilantro.
