1. In a shallow dish, place the chicken cut into cubes. Drizzle with the juice of 1 orange and the lemon juice. Season with salt and pepper; sprinkle with crushed pepper. Let marinate for 1 hour.
2. Rinse and dry the tomatoes; cut into quarters.
3. Peel and slice the onions.
4. Drain the chicken cubes. Brown in 2 tablespoons of extra virgin olive oil for 5 to 7 minutes. Season with salt and pepper, turn and let cool.
5. Divide the chicken among glasses with the onions and tomatoes.
6. Season the juice of the last orange with salt and pepper; mix with the remaining oil. Pour over the chicken in the glasses.
7. Sprinkle with coriander and serve as an appetizer with skewers.
