1. In a shallow dish, mix the cracker crumbs and taco seasoning; set aside.
2. Flatten the chicken to 1/4 inch thickness between two sheets of wax paper. Place a cheese stick and about 1 tbsp of chilies on each piece of chicken.
3. Fold the chicken ends and roll; secure with a toothpick. Coat the chicken with the crumb mixture.
4. Place in a greased 13x9x2 inch baking dish. Bake uncovered at 350°F for 35-40 minutes or until the chicken juices run clear. Remove the toothpicks.
