Mix the lime zest, lime juice, garlic, herbs, red pepper flakes, salt, and 3 tablespoons of olive oil in a bowl.
Coat the chicken with this marinade and let it marinate for up to 4 hours in the refrigerator.
Preheat the oven to 400 F (200 C).
Heat the remaining oil in a non-stick skillet.
Drain the chicken pieces and add them a few at a time to the skillet, skin side down, leaving space between each one.
Fry for 3 minutes. Turn and fry for 1 minute more.
Repeat with the remaining chicken pieces, place them on a rack over a tray, and bake in the oven for 20 minutes, until the cooking juices are clear.
To prepare the mojo, combine all the ingredients except the olive oil in a bowl.
Heat the olive oil in a saucepan until it smokes, then pour it over the mixture. Let it cool and store it until serving time.
