In a cast-iron pan, melt the butter and oil, and brown the chicken cubes over high heat.

Off the heat, add the butter and mix well.
Coat the chicken cubes with the sauce and garnish with orange zest that you will have taken care to blanch for 2 minutes to clean it of its chemical additives.
