1. Pour one and a half liters of water into a large cast iron pot and bring to a boil. While whisking, slowly pour in the chickpea flour. Mix and add salt. Cook over low heat for 50 minutes, stirring often. The dough should be smooth and syrupy.
2. Grease a cookie sheet. Spread the dough on the sheet and drizzle with extra virgin olive oil.
3. Preheat the oven to 350°F and cook until the surface is lightly golden. Sprinkle with freshly ground pepper and serve.
TIP: Excellent as an appetizer, served with a glass of wine or port.
