In a large cauldron, melt the lard, then brown the onion and French shallot for 3 minutes.
Add the ground pork, mix well, and cook for 3 to 4 minutes over medium heat.
Add the nutmeg, cloves, coriander, and chopped garlic.
Mix well and cook for another 3 minutes.
Cook, covered, over low heat for 45 minutes.
Remove from heat and mash the cretons with a fork. Mix in the gin and chives, then season with salt and pepper.
Place the mixture in a terrine and store in the refrigerator.
