In a saucepan, bring the milk, cream, sugar, corn syrup, split and scraped vanilla pod, and honey to a boil for about 30 minutes, until the mixture caramelizes slightly and coats the spatula (or reaches a temperature of around 215/217 F – 102/103 C).
Remove the vanilla.
Off the heat, add the milk chocolate in pieces and mix until melted.
Fill jars immediately and store in the refrigerator.
