1. Cut the potatoes into thick slices.

2. Remove the skin from the chorizo and cut into small pieces.

3. Peel the onion and chop.

4. Peel and chop the garlic.

5. Remove the seeds from the bell pepper and cut into thin strips.

6. Sauté the onion and bell pepper for 10 minutes in 2 tablespoons of extra virgin olive oil. Add the garlic, chorizo, and potatoes. Cook for another 5 minutes over high heat.

7. Preheat the oven to 180°C.

8. Beat the eggs with the flour. Add the milk, parsley, salt, and pepper. Mix with the chorizo mixture. Pour into a greased dish. Bake for 30 minutes.

9. Remove from the oven and serve immediately.
