Using an electric mixer, beat the eggs with the sugar, then add the flour, coconut flakes, and coconut milk.
Mix well.
Divide the caramelized pineapple among the 8 ramekins, then pour the clafoutis mixture over top.
Bake for 30 minutes, or until the center is set and the top is golden brown.
