3. Let it cook for 2 minutes before adding the clams and preserved lemons. Season with plenty of pepper; cover and cook for 8 minutes. Remove the clams and place them in shallow plates.
4. Whisk in the cold butter into the sauce.
5. Pour the sauce over the clams and serve.
