1. Slice the coconut pulp into thin slices using a mandoline.
2. Rinse the apple; cut into 4 and slice into equal thin pieces.
3. Rinse and chop the coriander leaves.
4. Mix the apple and coconut slices with half of the coriander and season with a pinch of flaky sea salt.
5. Cook the cod fillets for 7 minutes using steam.
6. In a saucepan, heat the coconut milk; add the remaining coriander and bruise the lemongrass stick; heat for 2 minutes over low heat. Divide into 4 soup plates.
7. Place the hot cod fillets on the plates and cover with the seasoned coconut and apple slices.
