1. Pour the water and sugar into a saucepan and bring to a boil.

2. Dip the candy thermometer for cooking at 250°F.

3. Dip the bottom of the saucepan into a container of cold water to stop cooking.

4. Incorporate the almond powder in two parts while mixing with a wooden spoon. Add the egg white.

5. Heat over low heat for 3 to 4 minutes. While stirring slowly, the paste will thicken.

6. Pour 1/3 of the icing sugar into a mixing bowl and place the paste on it.

7. Knead while gradually incorporating the rest of the sugar.

8. Divide into logs and wrap in food film.
