1. Cut the Cornish chickens in half, sprinkle with flour.
2. In a large pot, cook the bacon in 6 tablespoons of extra virgin olive oil. Add the chopped onion, celery, carrot, and Cornish chickens. Cook over low heat for 15 minutes. Add the rosemary and sage, and pour in the red wine. Season with salt and pepper, to taste. Cover and cook for 20 minutes.
3. Add the chicken broth and cook uncovered for 1/2 hour. Serve with a side of oven-baked fries.
