1. In a small bowl, mix the butter and old-fashioned mustard. Set aside.
2. In a bowl, mix the sauerkraut, pecans, cranberries, cloves, caraway seeds, onion, and half of the cognac. Fill the cavities of the chickens with this mixture.
3. Transfer the chickens to a baking dish. Season the chickens with salt and pepper. Cover the chickens with the butter-mustard mixture. Place two slices of bacon on each chicken.
4. Place all the vegetables around the chickens and drizzle with the remaining cognac.
5. Bake for about 1 hour.
6. To serve, cut the Cornwall chickens in half and serve with the filling and vegetables.
