 1. To swell the wheat semolina, place the semolina in a large bowl. Cover the semolina with boiling water. Add a pinch of salt and a nut of butter and mix. Cover for 5 minutes. With a fork, mix the semolina to loosen the grains.

2. In a pot, heat the olive oil and add the onions. Let cook for 2 minutes. Add the squash and courgette dice and cook for 4 minutes. Add the spices and mix well. Cover for 4 minutes.

3. Place the vegetables on the semolina and serve.
