Preheat the oven to 350°F.
1. In a robot, mix together the flour, cold butter diced and the herbs.
2. Crumble this mixture to get small lumps.
3. Bake to brown, 10 – 12 minutes.
4. Meanwhile, cook the onions and the rest of the herbs in a little oil over medium heat. The onions should lose their moisture, but not caramelize, so stay tender!
When everything is cooled, dress as follows: a layer of roasted onions, the olives, the crumbled herb crumble and finish with a piece of anchovy fillet.
