1. Place the pork roast in a pot with the peeled and halved onions, the bay leaves, the peppercorns, and a pinch of salt. Cover with water; bring to a boil, then reduce heat. Cover the pot and let cook for 30 minutes over low heat. Remove the roast, place on a large plate, and cover with aluminum foil. Let cool.
2. Preheat the oven to 350°F (177°C).
3. Mix the hazelnuts and breadcrumbs. Add the butter, mustard, and a bit of crushed pepper. Mix until you get a smooth paste.
4. Coat the roast with the mustard mixture. Place the roast in a baking dish and bake for 40 minutes.
5. Remove from the oven and let rest for 10 minutes covered with aluminum foil, before serving with buttered noodles and green beans.
